This is a delightful Recipe….! And the best part is, cooking preparation is next to none. Easiest recipe ever and a Remedy for seasonal, Cold and Flu, packed with flavour and variety of nutritional goodness!
All the spices used in this broth have travelled back and forth for centuries, along the Silk Road and were interpreted by a multitude of cultures’ palates.
Some of the star cast are Ginger, Turmeric, Black Pepper and Cloves!
Ginger: Helps you sweat out the toxins in your body, which is helpful when you have a cold or flu.
Turmeric: Powerful anti-inflammatory plus adds delicious flavour and a beautiful colour.
Black pepper: Also a very good anti-inflammatory and anti-bacterial agent.
Cloves: A good natural Antiseptic with anti-inflammatory qualities as well as an effective pain reliever and also adds aromatic scent to the broth.
So this is how you make it!
Ingredients:
1 medium chicken pieces, bones and all.
1 Onion – quartered
1 Tomato- quartered
6 cloves of Garlic.
1 thumb size fresh Ginger
5 whole Cloves
2 black Cardamoms
10 black Peppercorns
1 tablespoon dry Coriander seeds
1 tablespoon Cumin seeds
1 tablespoon Aniseeds
1 Star anise
1 Cinnamon stick
1 Bay leaf
Garnish
A small pinch of red Pepper or Chilli flakes if you like it hot.
2 teaspoons Turmeric powder
Handful of fresh Coriander, finely chopped.
1/2 Lemon juice and slices.
Method:
Wash the chicken and add it in a pressure cooker or a deep pot along with onion, garlic, ginger, tomato and all the dry whole spices with water and salt.
Pressure cook until 2 whistles (5 minutes) on high heat or boil on high for 5 minutes and then simmer on low heat for 35 minutes if you are cooking in a normal pot.
Strain the soup using a fine strainer into serving bowls.
Take out the chicken pieces and add to the soup or save it with some broth for the “Pindi Pulao” (recipe coming soon 😊)
Add a pinch of Turmeric, chopped Coriander, red Pepper or Chilli flakes, Lemon juice and slices in each serving bowl.
Serve hot.
